Carrot Ginger Soup

This is one of my family’s favorite soups, and great for cold and flu season

2 tbsp olive oil
2 chopped white onions
About 4-5 cloves of garlic diced
About 2 inches of fresh diced ginger
2 tspn cumin seeds
1 tspn ground coriander
Couple sprigs of thyme
2 bay leafs
Lots of ground pepper
1/2 tbsp salt
Cook on med for a few minutes

Add 2 containers of unsalted chicken stock
Add lots of peeled chopped carrots maybe 15-20 depending on size
3 stalks of celery chopped
2 medium sized potatoes chopped and peeled
Bring to a boil then simmer for about 45 minutes

I use an immersion blender to make it smooth

Serve with crumbled feta and chopped parsleyimage
