Beet Soup

It’s been snowy and miserable out lately, so tonight we are having Beet Soup for dinner. It is warm and comforting and tastes like the garden. This is a soup I make often because everyone in my house loves it! It’s full of flavour, hearty and super healthy. Dad is training for a half marathon so I’m trying to keep things healthy, and with 3 kids you don’t want anyone sick – this soup is great at keeping colds away!

In large pot

Add olive oil
2 chopped onions
4-5 cloves chopped garlic
About 1″ chopped ginger
1/2 tbsp salt
lots of ground black pepper
1 tspn dried oregano

Sauté for a few minutes

Add 8 cups of UNSALTED beef stock
2 large chopped and peeled carrots
2 stalks chopped celery
2 chopped and peeled potatoes
7 chopped and peeled big beets

Bring to boil then turn heat to low and cover pot, simmer for 45-50 minutes or until beets are tender

Use an immersion blender to make it smooth.

Serve with crumbled feta on top
