Tuna Casserole

Tonight’s dinner is a classic, Tuna casserole. I’ve made tuna casserole a million ways but this is my favorite. It’s a good weeknight dinner because I can mix it together and throw it in the oven and then help my 7 year old out with homework, do yoga, play with the little ones or simply sit down and relax! And if Dad is working later (like tonight) or going for a run after work, it still tastes good later on.

Cook pasta
I like shells or bow ties for this
Drain and set aside

In large casserole dish mix:

1 chopped red onion
2-3 cloves chopped garlic
1 stalk chopped celery
6-7 sliced mushrooms
2 cups of Greek yogurt
1 cup grated Parmesan
1 tbsp course mustard
1 tbsp Worcestershire sauce
1 tspn salt
Lots of ground black pepper
Lots of Dill fresh or dried
2 cans of flaked tuna drained

Cover and Bake at 400 for 60 minutes
Stir about halfway through

Top with shredded cheddar cheese at the end
