Cardamom Chocolate Brownies

I just love the taste of cardamom with chocolate! It gives it a refreshing touch to the richness. Of course I discovered we were out of butter when I started measuring everything out, so I had to improvise with some olive oil. I also decided to cut down the amount of fat and add an extra egg. They turned out fudgey with that wonderful cardamom flavour!

Chocolate Cardamom Brownies

Combine in bowl:

1 1/3 cup flour
1 tspn baking powder
1/2 tspn salt
5 green cardamom pods (open to get seeds out and then chop or crush them into a powder)

In a large bowl:

Cream together

2/3 cup white sugar
2/3 cup brown sugar
2/3 cup olive oil

Add 5 eggs

Mix well then add

1 cup cocoa

Mix then add the other bowl of dry ingredients

Bake at 350 for about 35-40 minutes
