Normally on the weekend Dad cooks dinner which is awesome, but today he spent the entire day trying to level out our leaning garage. So I realized pretty late that dinner was on me and I hadn’t pulled any meat out of the freezer.
With about an hour to spare I’m whipping up some fresh pasta with a roasted veggie sauce. You can find my pasta recipe a few blog posts ago, but I’ll tell you what’s in tonight’s sauce.

Roast in oven at 400 for about 35 minutes
