Beef Stew

Tonight we have soccer for my 7 year old so I’m making beef stew. I started it nice and early so it’ll be ready before the game and since Dad is meeting us there after work, he can just heat some up when we all get home later. This is a pretty easy meal and total comfort food for a rainy day. It does take some time though for the meat to stew to a falling apart texture. Also when buying stewing beef make sure it has some good lines of fat running through it, that way while its cooking for so long it doesn’t get tough.

Beef Stew

In a large soup pot brown meat on med heat

2 tbsp olive oil
1 pound of stewing beef chunks (I toss them in 1/4 cup flour and salt, pepper, 1tspn oregano, 1 tspn garlic powder, 1 tspn onion powder)

Once meat is browned add

I chopped onion
3 large cloves garlic chopped
6 sliced mushrooms
1 cinnamon stick (optional but I like the flavour it adds)
1 tbsp Worcestershire sauce
1 tbsp soy sauce

Cook for a few more minutes making sure to scrape all of the good flavours off the bottom of the pot (that’s what build the flavour for the gravy)

Add 6 cups of water and bring to a boil then cover and reduce to low heat to simmer for 3 hours

After about 3 hours add

4 peeled and chopped potatoes
5 peeled and chopped carrots
3 stalks celery chopped

Bring to a boil then cover and reduce heat to simmer for about 45 minutes
