Roasted Salmon With Fennel, Tomato and Red Onion

Tonight dinner will be a lighter, prettier dish than yesterday. We are having roasted salmon with fennel, tomatoes, onion and potatoes. I like to alternate between heavy meaty dishes, fish dishes and vegetarian.

Chop potatoes and toss in olive oil and salt (I leave the skin on)
Bake at 400 for 1 hour

In oven safe dish

Sliced fennel
Chopped fennel fronds
Cherry tomatoes
Chopped red onion
Lemon zest
Olive oil
Salt and pepper

Bake at 400 for 15 minutes

Add

Salmon
Lemon juice

Bake for another 15 – 20 minutes
