Today is my little girl’s first birthday! It’ll be the last first birthday in our family so I’m pretty excited. Plus we managed to survive the first year with a 7 year old, 2 year old and a baby!
For her birthday cake I am making a strawberry sponge cake topped with whip cream. First time I’ve ever made a sponge cake. I have great memories of eating this as a kid.
Separate 6 eggs
Beat egg whites with half a cup of sugar until stiff then set aside
Beat egg yolks with half a cup of sugar until stiff then fold into egg whites
Fold in 1 cup of flour a little at a time
Place cake mixture into a muffin tin lined with baking cups
Bake at 350 for about 15- 18 minutes
Slice strawberries and mix in 1/4 sugar and set aside to become syrupy
Once the little sponge cakes have cooled
Top with strawberries and whip cream and serve!
