Roasted Pork, Pears, Beets And Butternut Squash

We spent the entire day working outside, there is a surprising amount of work to do on a small hobby farm! I wanted a healthy, no fuss sort of meal for dinner. So I made roasted pork loin with pears, beets, and butternut squash. It was delicious and very satisfying.

Bake whole beets not peeled for 1 hr 15 minutes at 400 degrees

Chop butternut squash into cubes and bake for 40 minutes at 400 degrees

Season and sear a pork loin then top with sliced pears and red onion, a sprig of thyme and drizzle with balsamic vinegar and bake for 30 minutes at 400 degrees

Let meat rest for about 10 minutes to keep it juicy

Meanwhile peel and slice beets

Drizzle pan juices over pork when sliced and plated
