Fish And Chips With Avocado And Cucumber Salsa

Last night dinner was a big hit. With a Newfie/ English background in our family fish and chips is a family favorite. I added a cucumber and avocado salsa to add a burst of freshness to the plate, that turned out to be my seven year old’s favorite part! It’s an easy meal that anyone can make but I always manage to dirty a lot of dishes with it, lol.
Fish and Chips with avocado and cucumber salsa:

Cut 5 or 6 potatoes into fries (I like thicker cut fries), toss them in olive oil and a tspn of salt then bake on a flat tray at 400 for 1 hr and 15 minutes

Chop up half a cucumber, 2 avocados, 1/4 red onion, squeeze half a lemon and lightly mix together, set aside in covered container in the fridge

In food processor blitz up some toasted bread ends and corn flakes, mix together with salt and pepper and 1 tspn oregano, and some lemon zest, set aside on a plate

Cut the fish into pieces, I used cod.

Get one plate ready with about 1/2 cup of flour, a bowl with one beaten egg and the plate with bread crumbs

First coat fish in flour, then dip in egg, then coat with breadcrumb mixture

Cook fish on med heat in fry pan for a few minutes each side (depends on thickness of fish)
