Chewy Peanut Butter Cookies

Dad has been bugging me to make biscuits lately and these are one of his favorites. Since it’s gloomy outside and there have been some bear sightings in the area (a bear who actually ate someone’s goats!) I thought we’d hang out inside today.

Chewy Peanut Butter Cookies:

In small bowl combine

2 1/2 cups flour
1 tspn baking soda
1/2 tspn salt

In large bowl cream together

1 1/2 cups brown sugar
3/4 cup peanut butter
1/4 cup margarine

Add 2 beaten eggs and 2 tbsp water

Add dry mixture to wet mixture and just mix till everything comes together

I have done this recipe with a stand mixer but my cookies always come out flat when I do, so I prefer to mix these by hand

Roll into 1″ balls then flatten lightly with a fork for a criss cross pattern

Bake at 375 for 12 to 15 minutes (don’t over bake or they won’t stay soft)
