Chickpeas With Mushrooms And Balsamic

Last night’s dinner was delicious, had to run to soccer right after so I’m posting this morning. This is a super fast and easy meal and very hearty. I always like to have a few cans of chick peas in the cupboard for when I need to make a fast but healthy dinner. Anyone can make this, and it is vegetarian. I served it on rice but would be excellent on toasted crusty bread.

Chickpeas with Mushrooms and Balsamic:

Dice 4-5 cloves of garlic
Dice about an inch of ginger
Sautée in pan with 2 tbsp butter and fresh herbs (I used rosemary, oregano and thyme)
Salt and pepper

After a minute or two add 12- 15 sliced crimini mushrooms and cook for a few minutes

Then add 1 can of drained and rinsed chickpeas

Pour in about 1/4 cup balsamic vinegar

Cook for 5 minutes more

Add chopped chives or green onion

Serve on rice or toast
