Rhubarb Crumble

My wonderful neighbor brought me some fresh rhubarb the other day. We planted rhubarb this year but probably won’t get to cook with it this year so bless her, I love rhubarb! I made crumble with it yesterday and it didn’t disappoint. I love that tangy bittersweet flavour and I’ve heard that rhubarb is packed full of nutrients. We didn’t have any vanilla ice cream so I served it with chocolate ice cream instead and it was still delicious!

Rhubarb Crumble:

I didn’t measure but I’m guessing there was about 3-4 cups of chopped rhubarb
I mixed that with 1 cup of brown sugar and 3 tbsp of flour and let it sit and get all syrupy

Spread out in a baking dish

Mix together

1 cup flour
1 cup quick cooking oats
1 cup brown sugar
1 cup melted butter

Spread crumble on top of rhubarb

Bake at 375 for 45 minutes
