Easy Egg Salad

Because we have chickens we are blessed with an abundance of eggs. With three kids to feed that is awesome, we eat a lot of scrambled eggs! Today I wanted something different so we had egg salad sandwiches on the fresh bread I made yesterday. So so good. And my 2 year old was so excited he could help with mashing it all up.

Egg Salad:

Boil your eggs for 11 minutes then set aside in cold water to cool

Peel eggshells from the eggs and place in large bowl


2 tbsp Dijon mustard
1/2 cup mayo
1/2 red onion diced small
A handful of chopped chives
Salt and pepper

Mash it all up and voila – egg salad
