Lamb Chops With Roasted Veggies

Last night’s dinner was just meat and veggies, and was so delicious! My one year old didn’t know what to think of the lamb though, I hope she comes to love lamb someday because it’s a favorite with everyone else here. It was super easy too, great for soccer night!

I peeled and chopped carrots and beets, chopped but didn’t peel the potatoes,then drizzled them with olive oil and added salt, pepper, thyme and rosemary. Baked them in the oven at 400 for 1 hour and 15 minutes

Then I seasoned with salt and pepper and fried the lamb in some olive oil and oregano. They were pretty thick chops, bone in, so I cooked them for about 7 minutes on each side on a med heat.

There you go, Lamb and Roasted Veggies!

  1. Looks delicious,although I haven’t eaten a lamb in my whole life. I see you are good at combining herbs and spices. Any tips you can give to me? 🙂 I cook sometimes but I want to learn how to make my dishes more delicious with the use of herbs and spices.

    1. I always have some herbs growing in my windowsill. For pasta dishes I like to use basil, oregano parsley and thyme (sometimes I use one sometimes I use all). For soups, meats and veggies I use thyme, oregano and rosemary. For dishes with chickpeas, lentils, salsa I like to add cilantro to brighten it and for fish dill is almost always good.
