Broccoli Cheese Soup

Here’s a quick, delicious and healthy dinner. Broccoli Cheese Soup. Only thing I would do different next time is make more! Everyone gobbled theirs up and were looking for seconds and thirds! I only used one head of broccoli next time I will use two.

Broccoli Cheese Soup:

Sautée for a few minutes in soup pot:

Olive oil
1 large chopped onion
2 stalk chopped celery
4-5 cloves garlic diced
Sprig of thyme
Sprig of rosemary
Sprig of oregano
Salt and lots of pepper

Add:

Chopped broccoli
Enough chicken stock to just cover broccoli

Cook for 15 minutes

In a separate pan make a roux:

3 tbsp butter and 3 tbsp flour – cook for a few more minutes

Then add:

2 cups of milk (I used 3.25% because we have it for the kids)

Cook that for ten minutes stirring often

Add 1/2 shredded spicy cheese (I used habanero jack)

Use an immersion blender for the broccoli and stock then add creamy mixture

Serve with chives and shredded cheddar

  1. I love broccoli cheese soup!
    The only big difference in my recipe, is after the broccoli is soft, I puree it and put it back in. It makes my soup ‘stick to your ribs’ thick. And I don’t use as much cream. I’m going to try the spicy cheese next time!
