So a funny story, the other day I went to the store to buy 3.25% milk for the baby and when I got home I gave her a bottle of it and she really really did not want to drink it. I finally convinced her to drink it till it was done, then when I went to wash out the bottle it was really tough to get clean. I checked the date on the milk, all good. Later before bed I was about to pour another bottle and thought I’d take a closer look at what I had bought. Turns out I bought buttermilk! And I bought 4 litres of it too.
I laughed so hard and then felt so incredibly bad, like a horrible mom sort of feeling and I sat on the floor half laughing half crying. My other half I’m sure thought I had finally lost my mind!
Anyhow long story short, I will give some of that buttermilk to my neighbor but I still have a lot of buttermilk to bake with so expect some buttermilk recipes coming your way! Today I made scones, yummy scones!
Blueberry, buttermilk scones with cinnamon:
In large bowl mix together, then add the margarine and mix until crumbly in texture:
3 cups flour
1 tspn baking powder
1/2 tspn baking soda
1 tspn salt
1 tspn cinnamon
6 tbsp margarine
Then mix in:
1/2 cup packed brown sugar
1 cup fresh blueberries
Make a well in middle and mix in ( careful not to over mix):
1 cup buttermilk
Put dough in fridge to chill for an hour
On greased cookie sheet:
Make a ball about the size of your palm place on cookie sheet and flatten slightly
Then brush with milk and sprinkle with brown sugar
Bake at 400 for about 20 minutes or until just golden
serve warm with butter or jam
