Super Fluffy Pancakes

I made the fluffiest pancakes that I’ve ever made! Apparently using buttermilk instead of just souring your milk with vinegar actually works better, lol. The batter was beautiful and thick and they got even puffer in the pan! I’m enjoying my mistake of buying buttermilk instead of the baby’s milk the other day.

Its nice to enjoy pancakes when everyone is home and all of the chores are done, except weeding of the garden which never ends. Our north tree line is now all planted, the hay arrived for the goats and that is all put away. Now for some family time!

Blueberry Buttermilk Pancakes:

In large bowl mix together:

2 cups flour
2 tspn baking powder
1 tspn baking soda
1 tspn salt
1/4 cup brown sugar

In separate bowl mix:

1 1/2 cups buttermilk
2 eggs

Add wet ingredients to dry careful to not over mix, should be lumpy, then add blueberries

Fry in butter or olive oil on medium heat, flip when they start to bubble
