Jalapeño, Cardamom, Chocolate Chip Muffins

I was craving chocolate and something spicy, there is a few jalapeños in the garden that have been calling my name!  These muffins will warm you from the inside without being too spicy, and the cardamom gives you a bit of a burst of freshness.

Jalapeño, Cardamom Chocolate Chip Muffins

Cream together in large bowl:

1 cup brown sugar
1/2 cup vegetable oil

Then mix in one at a time

2 large eggs

Add:

1 cup buttermilk

In separate bowl mix together:

3 cups all purpose flour
3 tspn baking powder
8 cardamom pods (remove shell and chop seeds finely)
1 tsp kosher course salt

Mix dry ingredients into wet ingredients careful not to over mix

Then fold in:

1 cup semi sweet chocolate chips
2-3 jalapeños diced finely

Pour into greased muffin pan

Top with a mixture of 2 tbsp brown sugar and 1 tspn cinnamon

cook for about 15 minutes at 375
