The zucchini in our garden are going crazy, had to make something or many things out of this beast that I pulled out of the garden, it’s almost as big as my 1 year old!
So last night we had fish burgers on home made buns with salsa made out of garden tomatoes, onion and hot pepper and on the side zucchini sticks roasted in the oven. Super yummy, healthy and fresh, the zucchini sticks were so crispy!
I fed the chickens the inner part of the zucchini and I still have half left for baking with. Thank you garden once again!
Zucchini Sticks With Fish Burgers and Salsa
Chop up 5-6 Roma tomatoes (we have a mix of red and golden)
Dice 1 red onion
Dice 1 hot pepper
1 tspn olive oil
Juice from 1 lemon
Salt and pepper to taste
If my cilantro hadn’t bolted I would have added some
Set aside in fridge for flavours to blend
Chop zucchini into sticks, remove inner seed part and skin
Roll sticks in flour
Dip in beaten egg
Roll in breadcrumb mixture (breadcrumbs, 1/2 cup grated Parmesan, chopped oregano and thyme, zest from 1 lemon, salt and pepper)
Place zucchini sticks on greased baking tray
Bake at 400 for 30 minutes
Cut fish (I used cod) into pieces that will fit into your buns, then roll them in flour, season with salt and pepper and fry in pan with olive oil on medium heat
Place cooked fish in bun with mayo and salsa, serve with zucchini sticks
