Cranberry And Apple Spice Oatmeal Muffins

Fall is here! I have pulled most of the garden, just carrots and potatoes left. It’s been so busy I haven’t had a chance to do much baking lately so today it was nice just to relax and lose myself in baking some yummy muffins. I bought some fresh cranberries at the store last week, I’ve been dying to bake with them. Cranberry season always feels so short. And I still have some apples left over that I picked from my friend’s tree. While I was baking the kids couldn’t eat those cranberries fast enough, they are a little too tart for me to eat by themselves but my kids are weird.

These muffins taste like fall to me, they are wonderful warm with a bit of butter!


Cranberry And Apple Spice Oatmeal Muffins:

Mix and set aside:

1 cup milk
2 tbsp apple cider vinegar

Mix together in separate bowl:

2 cups flour
2 tspn baking powder
1 tspn salt
2 tspn cinnamon
1 tspn ground ginger
1/2 tspn nutmeg
1 cup quick cooking oats

In large bowl cream together:

1 cup brown sugar
1/2 cup room temp butter

Then add, one at a time:
2 eggs

Then add:

Milk and cider mixture

Then add dry ingredients

Once mixed add:

1 cup chopped cranberries
1/2 cup peeled and chopped apple

Spoon mixture into greased muffin tin
(makes approx 12-14 muffins)

Bake at 350 for about 20 minutes
