Sloppy Joes

Last night for dinner I made Sloppy Joes on homemade buns. The kids LOVED it! It was pretty delish! I’m loving that we can still add a touch of the garden into our meals with canned tomatoes and onions and jalapeño.  I have included both the recipe for the buns and the sloppy joes.  This fed my hungry family of five but there was nothing for leftovers, so if you want more, which i did, you can double the recipe.

Sloppy Joe Recipe:

First I browned a package of extra lean ground beef then added

2 chopped onions
1 chopped jalapeño
1tspn garlic powder
1 tspn Italian seasoning (unfortunately my herb garden did not survive the first snow)
1 tspn salt
Ground black pepper (I like a lot)
1 tbsp worstcheshire
1 tbsp vinegar
1 tbsp Dijon
1 tbsp brown sugar
about 3 big squirts of ketchup
1 can of our garden tomatoes

Let it simmer for an hour and a half or until it thickens up. Serve on a bun or toast

 

Homemade Buns Recipe:

Use a standing mixer with dough hook:

Combine
1 & 1/4 cup hot water
2 tspn active dry yeast
1 & 1/2 tbsp sugar
Let proof for approx 10 minutes ( the yeast forms a frothy layer)

Add
1 & 1/2 tbsp margarine
3 & 1/4 cups flour
1/2 tbsp salt

Mix till it forms a soft dough

Place on lightly floured surface and knead for a few more minutes

Place in lightly greased bowled cover with a damp towel

Let rise till it doubles in size

Punch down dough and separate into 8-10 balls

Place balls a bit apart on a cookie sheet and cover with damp towel and let rise until double in size again

I whisk together an egg white and brush the top of the buns before I bake them

Preheat oven to 425, then put buns in and turn heat to 375

Cook for 30 minutes
