Creamy Corn Chowder With Tumeric, Cumin And Coriander

We eat a lot of soup, especially once the garden has been harvested and veggies stored for the winter. Who doesn’t love a hot bowl of soup on a cold day! Last night we had creamy corn chowder with turmeric, cumin and coriander. It was delicious! I am a little obsessed with those spices, so if I can use them I do! They matched perfectly with the sweet corn.  It’s quick and easy to make, I didn’t start cooking till 6pm and we were eating at 6:45pm!

Creamy Corn Chowder With Tumeric, Cumin And Coriander:

In a soup pot

Add olive oil
2 chopped onions
1 tbsp salt
Lots of ground pepper
1 tspn turmeric
1 tspn ground coriander
2 tspn cumin seeds
1 tspn garlic powder (always use fresh garlic 4-5 cloves if you have it, I ran out)
2 tbsp flour

Sautée for a few minutes

Add 4 1/2 cups of milk
3 peeled and chopped potatoes (cut them into small pieces for quicker cooking)

Cover and simmer for 20 minutes

Then add corn (I used 5 cobs just take a knife and cut the corn kernels off)

Simmer for another 15 minutes

Stir it often and don’t let it really boil, just lightly simmer
