Cauliflower Soup With Tumeric, Ginger And Honey

I found fresh Tumeric at the store and couldn’t wait to try cooking with it! I also bought some local honey and I’ve read that the two pair well together. So tonight for dinner we are having Cauliflower soup with Tumeric, Ginger and Honey. It’s the last bag of cauliflower from our garden this summer and that saddens me but it’s there to be eaten!

This was super yummy, kids loved it!  We had some yellow faces by the end lol.

Cauliflower Soup With Fresh Tumeric, Ginger And Honey:

In large soup pot sautée for a few minutes:

2 tbsp olive oil
2-3 cloves chopped garlic
1-2 inches of finely chopped fresh ginger
1-2 inches of finely chopped fresh Tumeric (or 1 tspn dry Tumeric)
2 chopped onions
2 tspn cumin seeds
Lots of ground black pepper (I think I did about 30 rotations on the pepper grinder!)
1/2 tbsp salt

Then add 2 tbsp honey, fry for another minute

Then add:

1 head cauliflower chopped
1 large potato chopped into bite size pieces
Pour in milk till veggies are covered (I used 3.25%)

Cook on low heat for 30-40 minutes or until veggies are tender, stirring often

Stir in 3 tbsp lemon juice and top with chopped cilantro
