Baked Penne

I don’t cook with a lot of cheese these days, but since I both ran and did yoga today I’m craving something hearty and cheesy and homey.  Plus we have an abundance of penne in the house.  This dish is pretty easy, I didn’t make much from scratch. I know my kids will love it!

Baked Penne:

First brown and drain 1 package of ground beef
Then add onions, garlic, 1 portobello mushroom, fresh oregano and cook for a few minutes
Add 1 1/2 cans of pasta sauce and bring to a light simmer, cook for 10 minutes

Stir in cooked penne pasta
Then stir in a big chunk of feta

Pour mixture into large baking dish and cover with a spicy cheese (I used jalapeño cheddar)

Bake in the oven at 350 for 25 minutes

Serve with fresh basil
