Tomato, Fennel, And Spinach Soup

I am completely a soupaholic, I just freaking love soup. Today Dad is working the night shift so he got to go cross country skiing during the day, it’s super cold out so I made him some healthy hot soup for when he got back, we all got to eat some for lunch.

I made Tomato, Fennel And Spinach soup. This is a great combination of flavors, super yummy, and luckily I still have some goodies left from the garden like frozen spinach, onions and canned tomatoes.  This was quick and easy to make, maybe took half an hour from prep to eating.

Tomato, Fennel And Spinach Soup:

In large soup pot sautée for a few minutes:

2 diced onions
4-5 diced cloves of garlic
1 bulb of fennel sliced
2 sprigs fresh oregano
1 tbsp salt
Lots of ground pepper

Then add:

2 cans of tomatoes
1 container of unsalted chicken stock

Bring to a simmer and cook for 10-15 minutes

Then add:

1 pkg frozen chopped spinach

Cook for a few minutes

Take soup off the heat and add a handful of chopped cherry tomatoes

Serve with crumbled feta
